Better-than-Tuna Salad
Ingredients- 1 cup boiled garbanzo beans (chickpeas) or 1 cup tinned chickpeas
- ¼ medium sized onion chopped
- 2 tbsp finely chopped capsicum – red or green
- 2 tbsp finely chopped celery
- 5 - 6 tbsp vegan mayonnaise
- lemon juice to taste
- salt and pepper to taste
- parsley for garnish (optional)
Method
Smash the garbanzo beans with a fork and add the other ingredients. Mix well. Garnish with parsely and serve.
