Thai Peanut Salad **

Ingredients



  • 1 cup of shredded cabbage, red or Chinese

  • 2 cups of grated carrot

  • 1/2 onion finely sliced

  • 1 large apple, grated

For the Dressing

  • 1/4 cup of peanut butter

  • 1/4 cup of water

  • 2 cloves of finely minced garlic

  • 2 tbsp of lemon juice

  • 2 tbsp of soy sauce

  • salt and pepper to taste


Method

Toss the salad ingredients together in a large bowl. Make the dressing separately and then pour it over the salad.

Serves 6-8.
