Broccoli Salad

Ingredients

  • 5 cups broccoli florets

  • ½ cup sunflower seeds

  • ¼ chopped red or sweet onion

  • ½ cup cup raisins


Dressing

  • ½ cup cashews, soaked and drained

  • 2 dates

  • 1 tbsp apple cider vinegar

  • ⅛ tsp sea salt

  • 6 tbsp water


Method
In a large mixing bowl, toss together the broccoli, sunflower seeds, red onion and raisins.
In a blender, combine the dressing ingredients and blend until smooth.
Pour the dressing over the salad ingredients and toss to coat.
serves 4-6
