Beetroot spring onion salad with sunflower seeds and lettuce

Ingredients
For the salad
• 2 cups beetroots boiled and chopped in 1 cm cubes
• 1/3 cup spring onions chopped fine
• 1/4 cup sunflower seeds
• lettuce or salad greens for the bed.
Method
Put the beetroot, spring onions and sunflower seeds in a bowl and add the dressing to it. Mix well and place on a bed of lettuce or salad greens.
Serves 2 - 4
