Beetroot Salad **
Ingredients
- 2 cups boiled and cubed beet
- 1/4 cup spring onions, chopped
- 3 tbsp soy sauce
- 1 tsp grated ginger
- 2 tbsp rice wine vinegar
Method
Toss together beetroot with spring onions.
For the dressing
Mix the soy sauce, grated ginger, rice wine vinegar. Pour this over the beet and spring onions. Let is stand for about ½ hour before serving for better results.
Serves 3-4.
