Stir Fried Vegetables


It's best to select 4 - 5 vegetables of your choice with different colors to make the dish colorful. Or you can do it with just different greens. All the vegetables should be in similar proportions.

Ingredients

Assorted Vegetables



  • carrots

  • cauliflower

  • green, red, yellow capsicum

  • various types of mushrooms

  • spring onions

  • baby corn

  • snow peas

  • bean sprouts

  • zucchini

  • celery

  • green beans

  • onions

  • broccoli

  • cabbage

  • bak choy

  • chinese cabbage

  • spinach


For the Marinade of Tofu



  • soy sauce/Tamari

  • lemon juice

  • ginger

  • garlic

  • chillies


For the Garnishing



  • grated ginger

  • finely chopped garlic

  • sesame seeds (roasted)

  • 2 tbsp of jaggery

  • dash of olive oil


Method


Mix equal quantities of soy sauce and lemon juice and add ginger / garlic / chillies to taste. Cut the tofu into bite size pieces of your choice. Marinate the tofu in advance for a few hours. Cut the vegetables in bite size pieces Chinese style, and keep them separately.
Heat the oil in the wok and put in the ginger. When the ginger is browning, take it out with perforated spoon to let the oil drain. Add the garlic to the same oil and remove it when it browns with a perforated spoon. Very little oil is left in the wok which will help cook the vegetables.
Put the vegetables in, one by one, and cook on a high flame so that they cook quickly and are crispy taking out one before putting the next one in. This way each one is cooked just as needed. OR if you are familiar with how long each vegetable takes to cook, put them in the wok in the order of the time required and cook all the vegetables together. Take them out once they're cooked.
Put in the marinated tofu. Cook and remove.
Put a little jaggery to melt in the wok. When it melts, cook it at a low flame, stirring all the while, to remove the water content so that it just begins to burn. At this point if you drop a small bit on a cold spoon it should cool and be solid (like when making chikki).
Stir in the ginger and garlic and let it solidify so that there is a little jaggery on all the ginger and garlic. If desired, add the sesame seeds. This is the garnish.

Variation

Alternatively, you can serve the vegetables with peanut sauce.

Mix the tofu, vegetables and a little soy sauce if needed. Sprinkle with the garnish and serve with rice or noodles.
