Stir Fried or Grilled Mexican Vegetables

Great served with the Mexican rice, Mexican beans, Mexican tortillas, chili sauce and salsa. Also great as a side dish to Mexican entrees such as tacos, enchiladas, burritos, etc.

Ingredients

  • onions
  • zucchini
  • red and yellow bell peppers
  • add any other vegetable of your wish
  • garlic (optional)
  • oregano
  • olive oil
  • Method

    Chop all the veggies into bite size pieces. Put some olive oil in a wok with a medium high flame. Put the onions in first, then garlic and oregano and then all the rest of the veggies. Cook till the vegetables are cooked but still crunchy.
