Stuffed Mixed Vegetables I

Ingredients



  • brinjals (eggplants), onions & potatoes

  • 2 tsp sesame seeds

  • 2 tsp dry coconut

  • 2 tsp ground nut powder

  • 1 tsp red chilli powder (optional)

  • 1/2 tsp turmeric

  • 4 cloves garlic

  • 30 gm jaggery

  • sea salt to taste

  • lime juice & coriander to garnish

  • Method

    Roast the sesame, coconut, groundnut and grind it into a coarse powder. Add the chilli, turmeric, garlic, jaggery and salt and stuff the vegetables. Steam them till they are cooked. Make a sauce with the remaining masala (spice) and pour it over the veggies, add the lime juice on top, garnish and serve.

    Variation

    You can use a host of other vegetables, just make sure they all take almost the same time to cook or add in vegetables that need longer to cook first.
