Palak 'Paneer'
Ingredients- 500 g spinach
- 3 onions
- 2 flakes garlic
- 1 inch piece of ginger
- 1 tsp cumin seeds
- 150 to 200 g tofu (soy paneer)
- 2 tbsp cashew paste
- salt to taste
- 2 tsp garam masala
- 2 tsp cumin powder
- 1 tsp chilli Powder
Method
Cut the tofu in to cubes of desired size (preferably not too small). Marinate the tofu in some cashew paste and cumin powder for half an hour. Grill or toast this tofu as you like. Cook the spinach in water. Drain the water and then make puree of the spinach leaves. Cut two of the onions finely and sauté them till transparent. Grind the other onion, ginger and the garlic flakes to a fine paste. Add this paste to the sautéed onions. Also add the puree and the spice powders. Add some water if necessary. Let boil for a minute or two.Add the tofu to the prepared spinach and let it simmer for a few more minutes.
