Mixed Vegetables

Ingredients



  • equal quantities of cubed carrots, beans, potatoes and peas. All vegetables should be about the same size.

  • onions, finely chopped (optional)

  • mustard seed for tempering

  • a pinch of asafoetida

  • turmeric

  • curry powder

  • cumin powder

  • chilli powder (optional)

  • oil for cooking

  • Method

    In a pan heat the oil. Put in the mustard seeds and when they pop, the asafoetida. Add the onions and fry. Then add the other vegetables and cook. When they are half done add the remaining spices and cook till they are fully done. Serve hot.
