French Beans with Peanuts & Coconut**

Ingredients



  • 1 cup french beans, chopped fine

  • 2 tbsp urad dal

  • 4 tbsp peanuts in small pieces

  • 4 tbsp grated coconut

  • salt , tumeric, mustard seeds, ginger chilli as per paste

  • Method

    Place a thick cast iron pan / kadhai on a slow flame. Add urad dal, after a minute add mustard seeds, stirring all the while. When they pop add asafoetida, and then immediately the beans. Stir. Add a little water to prevent sticking and cook until the beans are cooked. You can add a little water again if it evaporates. When the beans are cooked the water should have evaporated. Do not fully cover the beans or they will lose their green color. Once they are ready and salt, turmeric, ginger chilly paste, crushed peanuts and coconut and cook further till everything is well mixed. Serve hot with chappaties or rice.

    Variations

    The peanuts and coconut replace the oil and add flavour. You can use any one of them or sesame seeds instead of one or both. Spices can be used as per taste. A similar dish can be made with other vegetables.
