Baigan ka Bhartha

Ingredients



    • 1 kg big eggplants

    • ½ cup scallion

    • ½ cup onions

    • 2 cloves garlic crushed

    • ½ tsp turmeric

    • ½ tsp dhania,jeera,red chilli,mustard seeds

    • 1 pinch asafetida

    • salt to taste

    • 1 tsp lemon juice

    • fresh coriander leaves chopped for garnish



Method

Grill/barbeque eggplant and remove skin. Mash it and keep it aside. Heat a pan to medium heat and add asafetida, scallion and onion and sauté till onion in translucent. Add crush garlic, turmeric, dhania jeera and red chilli powder and sea salt to taste and add ¼ cup of water and let it cook for 10 seconds. Add eggplant and mix it thoroughly well and cook for 4 to 5 minutes. Add lemon juice and garnish with fresh coriander.
