Walnut Cake with Apricots
Ingredients
- 2 cups mix nuts
- 1 cup dry apricots (put them in water 1 hour before)
- 1/2 cup seeded dates
- 5-6 tbsp date syrup
- fruits 4-5 - kiwi, pineapple/mangoes, bananas
- tahini
- 1 grated coconut
Method
In blender put the nuts and the dry fruits, than blend.
In a cake shape on the bottom put the nut- and dried fruit mixture. If it is too dry add some coconut milk. Make a cream from the bananas and tahini, put some date syrup inside.
Put the cream above the base then some coconut powder and then some fruits. Bake the dough for 30 mins at 180°C.
