Moist Chocolate Cake


Ingredients



  • 1 ½ cups of flour

  • 3 tbsp cocoa

  • 1 tsp baking soda

  • 3/4 cup jaggery

  • ½ tsp salt

  • 1 tbsp apple cider vinegar

  • 1/3 cup of vegetable oil

  • 1 tbsp of vinegar

  • 1 tsp of vanilla

  • 1 cup chocolate soy milk (or coconut milk if you prefer)


Method

Preheat the oven to 180 degrees (or 350 F) and prepare a 30cm square baking pan with greaseproof paper or grease it well with oil. Mix the dry ingredients together in a large bowl. In a separate bowl mix the jaggery, essence and oil to remove the lumps and then add the soy milk and vinegar. Stir this into the dry ingredients gradually and mix well. Bake this for 30 minutes.

You can also make muffins with this mixture, but bake for only 20 minutes.
