Cucumber Mint Raita **
Ingredients
- 2 cups soy yogurt
- 1 cup grated cucumber
- 1 tbsp fresh mint minced
- green chilly as desired
- 1 tbsp ground mustard seeds
- salt to taste
- 1 tbsp fresh green coriander leaves finely chopped for garnishing
Method
Mix all ingredients thoroughly and garnish with fresh coriander leaves and refrigerate.
Serves 6.
