Vegan Boursin **
Ingredients- 200g tofu
- 200g or 1 cup raw cashews soaked for at least 2 hours (4 – 6 hours or overnight is also good)
- 2 tsp salt
- 1 tsp garlic ground or minced fin
- 1 cup fresh herbs minced (basil, tarragon, parsley, dill, spring onion greens or chives)
- freshly ground pepper
- water as needed
- 1 tsp fresh lime juice
Serves 10.
