Vegan Boursin **

Ingredients
  • 200g tofu
  • 200g or 1 cup raw cashews soaked for at least 2 hours (4 – 6 hours or overnight is also good)
  • 2 tsp salt
  • 1 tsp garlic ground or minced fin
  • 1 cup fresh herbs minced (basil, tarragon, parsley, dill, spring onion greens or chives)
  • freshly ground pepper
  • water as needed
  • 1 tsp fresh lime juice
Method Pour out the water from the cashews. Place the cashews in a grinder. Blend till you get a reasonably smooth paste adding upto 1/3 cup water if needed. Add the tofu and garlic and salt in the blender to make a thick but creamy spread. Remove from the blender into a bowl. Add finely minced fresh herbs and fresh pepper and lime juice and stir together. Yeast flakes can be added for a cheesier taste if available but are not necessary.
