Red Pesto


Ingredients



  • 150g Sun-dried tomatoes

  • red and/or green basil (about 15 leaves of each)

  • 1 tbsp pine nuts or almonds (Roast these in a pan first. If you’re using almonds, soak them before removing the skin.)

  • 1 tbsp sesame seeds

  • 3 tbsp green olives

  • 6 tbsp extra virgin olive oil


Method

Mix all the ingredients together in a blender or mixer. Delicious with pasta or served on bread as an appetizer.

Serves 6-8.
