Bruschetta
Ingredients
- 1 whole grain baguette sliced obliquely
- 10 medium sized tomatoes
- 1 small bunch of basil
- 5 – 6 cloves of garlic
- Olive oil
- Salt and pepper
Method
Chop the tomatoes into small cubes and sprinkle with a little salt. Wash and finely chop the basil, then stir this through the tomato. Add salt and pepper to taste. Toast the bread and then rub with one clove of garlic. Pour some olive oil out onto a plate and dip the garlic side of the bread in the oil. Spoon some of the tomato mixture over each slice and serve immediately.
Serves 10-15.
