240ml soy milk added with 1 tbsp lime juice

		<description><![CDATA[Ingredients

1 bunch coriander washed and chopped into large pieces
1 - 2 green chillies
1/4 inch piece of ginger
juice of 1 lime
salt to taste
dash of jaggery (optional)

Method
Put all the ingredients in a blender. Add water a little at a time as needed till the chutney is of a smooth consistency.

1 cup cooked brown rice
1 cup vegan curd
chopped ginger
3 medium grated carrot/french beans

For the Tempering

1 tsp mustard seeds
dry red chillies or green chilli
curry leaves
pinch of asafoetida

150 gm soaked matki (smaller &#38; browner than whole moong)
1/2 cup grated cabbage and carrot
1/2 cup finely chopped cucumber,spinach and tomato
juice of 1 lime
black salt, red chilli powder to taste
2 tbsp grated coconut
2 tbsp roasted groundnut

Method
Steam and cool the matki. Add the grated vegetables. Add all other ingredients. Toss and serve.
